Using Generative AI to Build Next-Generation Flavors & Fragances

The AI and flavor scientists at NotCo have created what they call the first foundational generative AI model for flavor and fragrance. In short, they have created a "GenAI to smell your prompt" that intakes your prompt, such as "an ocean scent on a breezy summer day on a tropical island" to create a novel chemical formulation of that scent in one-shot (no iterations required). Join us for this exciting presentation featuring the project's AI and flavor leads Cindy Sigler: Cindy is a scientist in flavor and fragrance research with a strong foundation in analytical chemistry. She characterized floral fragrance pathways during her graduate studies and has four years of industry experience. At Impossible Foods, she developed innovative flavor technologies for plant-based beef. Currently, at NotCo, Cindy works with flavor models to enhance the AI system, optimizing plant-based products to minimize the gap between them and their animal-based equivalents. Francisco Clavero is the Machine Learning Team Leader at The Not Company in San Francisco, California. He graduated with a degree in Computer Engineering and a Master’s in Artificial Intelligence from Universidad de Chile. With over six years of hands-on experience as a Machine Learning and Full Stack Engineer, Francisco has researched, developed, and deployed effective AI systems across various industries, including Fintech, Telecom, and Biotechnology. Over the past two years, his primary focus has been on developing innovative machine learning models for flavor and fragrance.
