Preheat the Oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper or lightly grease it. 2. Mix Ingredients in a large bowl, combine the spice cake mix, pumpkin puree, vegetable oil, and egg. If you like a stronger pumpkin flavor, add the pumpkin pie spice. Stir until the ingredients are well combined and smooth. 3. Add Mix-ins (optional): If you add chocolate chips or nuts, gently fold them into the batter. 4. Scoop the Dough using a cookie scoop or spoon, drop tablespoon-sized balls of dough onto the prepared baking sheet. Space them about 2 inches apart, as they will spread slightly. 5. Bake the cookies for 10-12 minutes until they are set and lightly golden on the edges. 6. Cool. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. 7. Serve. Enjoy your soft, pumpkin-flavored cookies with a cup of coffee or tea! Stovetop Simmer Pot Recipe 1 apple sliced 1 orange sliced (leave the peel on) 3-4 cinnamon sticks 2-3 star anise (optional for a licorice-like scent) 1 Tablespoon Whole Cloves 1-2 teaspoons ground nutmeg or a few whole nutmeg seeds 2-3 sprigs of fresh rosemary (optional for a fresh, woodsy scent) 4-5 cups of water 1. Prepare the ingredients as stated above 2. Break the cinnamon sticks in half to release more of the aroma 3. Combine in a Pot and pour in the water until the ingredients are mostly submerged. 4. Simmer over low to medium heat. Bring the mixture to a gentle simmer, not a boil. 5. Let it simmer for several hours, adding more water as needed to prevent it from drying out. 6. Adjust the heat to keep the scent lingering at the perfect intensity.
