Mix Ingredients in a large bowl, combine the spice cake mix, pumpkin puree, vegetable oil, and egg. If you like a stronger pumpkin flavor, add the pumpkin pie spice. Stir until the ingredients are well combined and smooth. 3. Add Mix-ins (optional): If you add chocolate chips or nuts, gently fold them into the batter. 4. Scoop the Dough using a cookie scoop or spoon, drop tablespoon-sized balls of dough onto the prepared baking sheet. Space them about 2 inches apart, as they will spread slightly. 5.
