Shop now at Grocery Owl: https://www.groceryowl.com.sg/ ` Serves: 3 pax | Preparation time: 15 minutes • 2 tbsp KNIFE Premium Cooking Oil • 2 tsp KNIFE Thai Fish Sauce • 120g large oysters (thawed) • 1 tsp salt • 1 tbsp sweet potato flour for cleaning the oyster • 30g sweet potato flour • 1 tbsp rice flour • 100ml water • ½ tbsp + 1 tsp Chinese cooking wine • 3 eggs • 3 tbsp sambal chilli paste • 1 lime • 1 tsp rice vinegar Garnish • Spring onions, chopped into 5cm length • Coriander, chopped Step 1: Prepare the oysters • Add 1 tsp salt and 1 tbsp sweet potato flour onto a bowl with oysters, give it a good mix. Rinse with water. • Look out for black spots. Take a toothpick and prick it, and let the waste ooze out. Rinse the oyster until the water is clear. • Add in 1 tsp Knife Thai Fish Sauce and 1/2 tbsp Chinese cooking wine. Mix well and set aside. Step 2: Prepare the ingredients • Starch mixture: Mix sweet potato flour, rice flour and water together. Set aside. • Seasoning sauce mixture: Mix 1 tsp Knife Thai Fish Sauce and 1 tsp Chinese cooking wine together. Set aside. • Egg: Add 1 tbsp of the seasoning sauce onto eggs and beat well. Set aside. • Chilli: Mix sambal chilli, rice vinegar and lime juice together. Set aside. Step 3: Cook and serve • Heat up the Knife Cooking Oil in a pan. • Once the pan starts to smoke, pour in the starch mixture and spread the starch mixture thinly onto the pan. Once the edge starts to crisp, add in the beaten eggs. • Sprinkle some spring onions on it and flip the omelette over. • Separate into smaller pieces and push the omelette to one side. Add in oysters and 1 tsp of seasoning sauce.
