I am obsessed with those sous-vide egg bites from Starbucks, they are so yummy and full of protein! Try making them with me in an INSTANT POT today! Pioneer Woman Chorizo Egg Bites: From the back of the box that the silicone molds came in: 4 large eggs, 1/2 c cottage cheese, 1/2 c cheddar cheese (I used mild but would adjust to sharp or medium) 1/4 c broccoli (I used 1/2 chopped and sauteed red pepper and 1 package Canadian bacon) Put all ingredients in a blender. (I used a food processor) blend 30 seconds. Pour into the egg bite pan. Cover tightly with foil and place on the trivet in the Instant Pot. Add 1 cup water. Make sure it is set to seal and not vent. Use the STEAM setting for 10 minutes. After it's done, let vent naturally 10 minutes. Release any pressure that's left and remove the egg bites. Let them cool a few minutes before popping out of pan.
