Mix gram flour, sour curd, turmeric powder, salt, and red chilly powder to make a lump-free batter. 2. In a pestle, grind green chillies and ginger to make a paste. 3. Heat mustard oil in a kadhai, add dry red chilly, asafoetida, curry leaves, cloves, black pepper, fennel seeds powder, fenugreek seeds, and cumin seeds. Mix well. 4. Add the green chilli-ginger paste and mix. 5. Pour in the batter and stir continuously. 6. Add water gradually while stirring to prevent curd from splitting. 7. Keep the flame high until the mixture starts to boil, then reduce the flame. *Mooli ke Patto ki Sabzi (Radish Leaves Sabzi):* Ingredients: - Potatoes - Mustard oil - Cumin seeds - Garlic - Turmeric powder - Radish leaves - Salt - Mango powder Procedure: 1. Heat mustard oil, add cumin seeds and garlic. 2. When garlic turns golden brown, add turmeric powder and potatoes. Cook for 5 minutes. 3. Add salt, finely cut radish leaves, and mango powder. 4. Cook without covering to retain the green color of the leaves. *Bajra Roti:* Ingredients: - Bajra (pearl millet) flour - Warm water Procedure: 1. Knead the bajra flour with warm water to make a soft dough. 2. Make balls and roll out the rotis. 3. Cook on a pan, wetting the upper side to prevent sourness. 4. Optionally, add Akshaykalpa Organic Cow Ghee. *Bajre ka Maleda:* Ingredients: - Jaggery - Bajra rotis - Akshaykalpa Organic Cow Ghee Procedure: 1. Cut jaggery into small parts. 2. Mix hot rotis, jaggery, and ghee by pressing hard. 3. Make ladoos. Serve the above dishes as a Rajasthani Thali, along with gooseberry-coriander chutney. Enjoy!
