The goal for these first years was to create a place more in balance with planet earth, to grow my own food and life a more self sufficient life 💛🌱🌸 Sit back and relax by watching my content :) Thank you all so much, subscribe to follow the journey! xx Eugenia 👩🏽🍳 One Pan Slow Cooked Chicken Casserole Ingredients: 1 onion 5 garlic clove 3 cayenne peppers (if you like some light spicy flavour) 1 free range organic butchered chicken (mine weights less than 1 kg and has the skin on) olive oil, salt & pepper 1. Add olive oil (generously) to a pan, add your onions, garlic and pepper and sautee on medium heat for a few minutes. This will give flavour to the olive oil. For 2. Once everything is golden brown and soften add the chicken and seal on each side, around 1-2 minutes per side. Add salt and more olive oil if the pan gets dry. 3. Cover and cook on low heat for 1 hour. At 30 minutes turn over each chicken piece and cover again. The chicken , vegetables and olive oil would produce a "juice" that will soften and cook the chicken. During the last 30 minutes check your pan every once in a while to make sure it doesn't burn. 4. After 1 hour chicken should be really tender and caramelized in the outside. 5. Serve with a salad and steamed white rice. This two sides fit wonderfully in your dish. 6.
