除了越南牛肉河粉, 我也很喜歡越式雞絲湯河粉. 熬製湯底時間卻比牛肉河粉少很多, 材料也很簡單. 雞肉湯頭既清淡又鮮甜, 大家也不妨試試吧 歡迎訂閱我的YOUTUBE頻道:   / yansfoodie   追蹤我的INSTAGRAM:  / yansfoodie   追蹤我的FACEBOOK:  / yansfoodie   【食譜 RECIPE】 材料: 2-1/5磅 雞 1個 洋蔥 50克 薑 1湯匙 鹽 1茶匙 雞粉 6克 冰糖 香料: 1根 肉桂棒 3粒 八角 3顆 丁香 1茶匙 芫茜籽 配料: 蔥花 蔥白 芫茜 芽菜 青檸 做法: 1. 雞用粗鹽搓揉再沖水洗淨 2. 洋蔥切半然後把洋蔥及薑乾煎至焦或可以放入烤箱開上火先烤5分鐘然後翻面烤5分鐘 3. 中小火把香料燒至香氣散出然後放入香料袋裡備用 4. 把洋蔥及薑放入水裡, 用湯匙括掉黑色燒焦的地方 5. 切掉洋蔥蒂及把薑切片 6. 把雞, 洋蔥, 薑放入大鍋裡,加入鹽、雞粉、冰糖然後倒入10杯水, 大火煮至微滾 7. 煮至微滾後, 調至小火然後撇掉浮沫;保持微滾煮一小時 8. 一小時後, 再次撇掉浮沫, 加入香料包及魚露然後煮30分鐘 9. 30分鐘後, 把雞撈起放入冰水裡冷卻;把鍋裡所有材料撈掉然後撇掉浮沫 10. 當雞冷卻後, 用手撕出雞絲備用 11. 越南河粉跟據包裝指示煮好然後放進碗裡 12. 可以隨個人喜好放上配料, 放上雞絲, 最後把湯底沖入碗中,擠上青檸檬汁即可享用 Thank you for watching my video Please Subscribe To My Channel My Youtube channel:    / yansfoodie   My Instagram:   / yansfoodie   My Facebook:   / yansfoodie   Ingredients: 2-1/5 lbs whole chicken 1 yellow onion 50g ginger 1 tbsp salt 1 tsp chicken powder 6g rock sugar Spices: 1 cinnamon stick 3 star anise 3 cloves 1 tsp coriander seeds Toppings (optional) Green onion Cilantro Bean sprouts Lime Method: 1. Use kosher salt to rub all over the chicken, rinse and pat dry 2. Char onion and ginger in a frying pan or under broiler for 10 minutes until blacken 3. Toast the spices until fragrant then place the toasted spices into an empty tea bag or muslin bag 4. Use spoon to peel away onion and ginger charred skin; trim off onion stem end and slice ginger 5. Place chicken, onion, ginger into a large pot, add salt, chicken powder, rock suger, 10 cups of water then cook over high heat until gentle boil 6. When it comes to gentle boil, reduce heat to low and skim off the scum; keep it gentle boil for one hour 7. After one hour, skim off the scum, add spice bag, fish sauce and cook for 30 minutes 8. After 30 minutes, remove chicken from the pot and place into a bowl of ice water to cool down. Discard all ingredients and skim off the scum 9. Shred the chicken 10. Cook dried or fresh rice noodles according to package directions 11. Add cooked noodle to a bowl then add toppings, shredded chicken, pour in chicken broth and serve
