CRUST— REGULAR 2 1/2 cups all-purpose flour 1/2 tsp sea salt 1 cup butter (2 sticks), each stick cut into 20 pieces 1/4 cup ice water to start, plus more as needed (you may need up to 1/2 cup) CRUST— GLUTEN FREE 2 1/2 cups gluten-free flour blend (see Note) 2 teaspoons sugar 1 1/2 teaspoons xanthan gum (use 1 teaspoon if your flour blend already contains some) 1/2 tsp sea salt 1 cup butter (2 sticks), each stick cut into 20 pieces 1/3 cup ice water to start, plus more as needed **For the gluten-free flour you must use a “cup for cup” type.
