Salted Caramel Fried Apple Pies - A Fall Tradition in Kentucky

Salted Caramel Fried Apple Pies 20 ounce package - 6 inch - Empanada Dough 2 cans (21 ounces each) Apple Pie Filling 1/2 cup caramel 1/2 teaspoon sea salt 2 Tablespoons brown sugar 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1 teaspoon vanilla oil, for frying 2 cups confectioners’ sugar 1/4 cup hot water 1/2 teaspoon vanilla pinch of salt Using a medium bowl, stir together the apple pie filling, caramel, sea salt, brown sugar, cinnamon, nutmeg, and vanilla. Set aside. Begin heating your oil over a medium flame. Heat the oil to 360° - 375°. While the oil is heating, begin making your fried pies. Using one round of Empanada dough, place about 1/4 of a cup of apple pie filling in the middle of the dough. Moisten the edges of the dough with water. Fold one side of the dough over on top of the other side making a half circle shape.  Crimp or flute around the edge of the dough to help it hold together while frying. Place each filled pie on a parchment paper lined cookie sheet while you complete making the others.  Once your oil reaches temperature,  place two pies in the hot oil and allow them to fry on the first side for about four minutes before flipping to the other side. Fry on the second side for approximately two minutes or until the fried pies are as brown as you prefer them. Repeat this process with the remaining pies, frying two at a time. Upon removing them from the hot oil, place on a cooling rack over paper towels that will absorb the oil that drips off. Once the fried pies are slightly cooled , stir together the confectioners sugar, hot water, vanilla, and a pinch of salt. Brush this glaze over the fried pies. You may even want to brush the glaze on two or three times for a good coating. Serve as they are or on a plate with vanilla ice cream.
