I tried to make with Uk flour for 4 times and I was not happy. almost all Uk flour content high protain, to make Udon, it's too much. and also Uk flour content high ash, this mean the noodle will be darker colour. for me Japanese, Udon noodle should be white. finally I got good result with using French fine milled flour. low content protein and ash.
