Glass nooodles soup. How to create a clear soup but a very flavourful one? One way that many street hawkers likes to use is a combination of dried anchovies (ikan bilis) with dong choy (picked vege). Some may add some meat bones to it to further enhance the flavour. But generally, ikan bilis and dong choy will do the trick in 15minutes. Things to take note here may include choosing a higher qualify of ikan bilis, if not, the soup base could become rather fishy. Also, must remember to remove the head and innards of the ikan bilis. On the part of the dong choy, it can be the soup base too salty, therefore, reduce the amount and add it towards the end of the cooking. You may also add in one tablespoon of rock sugar into the soup base before serving.
