It's been a wonderful journey and so much fun meeting our "food friends" from literally all over the world! Thank you for all the comments, suggestions, tips, support, and kindness you have shown over these many years! But most of all thank you for sharing so many wonderful memories that the recipes, appliances and housewares have sparked! That really makes it all so much fun! We wanted to make something that represents the spirit of Cavalcade of Food! Something that is easy to make without a lot of fuss, is old-fashioned and inspired from a vintage recipe, and tastes good! We felt this cake hit all those marks! One Bowl Applesauce Cake 2 1/4 cups flour 1 tsp salt 1 tsp baking soda 1 tsp cinnamon 1 tsp vanilla 1 stick (1/2 cup) butter, softened (cut into small pieces) 1 cup molasses 1 egg 1 cup applesauce 3/4 cup raisin/currents or other dried fruit Preheat oven to 350 degrees In a large mixing bowl, combine flour, salt, baking soda and cinnamon. Add butter and cut into flour mixture using a pastry blender, two knives or your fingers. Add molasses, egg and applesauce. Beat well. Stir in dried fruit. Pour batter into a greased and floured 8"x8" baking pan. Bake for 50-60 minutes or until a toothpick inserted into the center of cake comes out clean. Cool on rack. Top cake with a dusting of powdered sugar, a cream cheese frosting, or a glaze made with a little lemon juice and powdered sugar.
