Ощипанный цыпленок

🟢材料: 雞1隻 薑、蔥 、紅蔥頭 適量 新鮮沙薑/沙薑粉 適量 紹興酒 1湯匙 鹽、豉油、炒芝麻適量 🟢做法: 1️⃣ 將雞的內臟去除,用鹽揉搓後洗淨,然後用薑汁和1湯匙紹興酒抹勻。 2️⃣ 水滾下鍋,大火蒸5分鐘,再轉中火蒸15分鐘,總共蒸20分鐘,蒸的時間視乎雞的大小酌量加減。關火等待5-10分鐘後才開蓋,取出雞肉放涼後手撕成小塊。 3️⃣ 將撕好的雞肉淋上沙薑醬,撒上炒芝麻。雞肉可與沙薑醬拌勻,拌勻就不需要薑蔥蓉及蔥頭豉油,不拌勻可用小碟分別盛載沙薑醬、薑蔥蓉和蔥頭豉油一起上桌,讓客人隨意選蘸。 📌備注: ♦沙薑醬的做法:沙薑粉加鹽,加入油和蒸雞的汁拌勻,或新鮮沙薑剁碎加鹽淋上熱油。 ♦薑蔥蓉的做法:薑和蔥切碎加鹽,淋入熱油拌勻。 ♦蔥頭豉油的做法:紅蔥頭切碎,淋入熱油,加豉油(醬油)拌勻。 🟢Ingredients: Chicken - 1 whole Ginger, spring onions, shallots - as needed Fresh sand ginger/sand ginger powder, as needed Shaoxing wine - 1 tablespoon Salt, soy sauce, fried sesame seeds - to taste 🟢Cooking Directions: 1️⃣ Remove the innards of the chicken, rub it with salt, wash it thoroughly, then coat it evenly with ginger juice and 1 tablespoon of Shaoxing wine. 2️⃣ Bring water to a boil in a pot, steam the chicken over high heat for 5 minutes, then reduce to medium heat and steam for another 15 minutes, for a total of 20 minutes. Wait for 5-10 minutes before uncovering. Once cooled, tear the chicken into small pieces by hand. 3️⃣ Pour the shredded chicken with sand ginger sauce and sprinkle with fried sesame. The chicken can be mixed with the sauce, and if mixed, there's no need for ginger and scallion paste, and shallot-soy sauce.
