红豆冰皮月饼 SnowSkin Mooncakes with Red Bean Paste

材料 ingredient: 20个 50g 冰皮月饼 牛奶 Milk 320g 炼乳 Condensed milk 70g 糯米粉 Glutinous rice flour 80g 粘米粉 Rice flour 50g 澄面粉 Wheat Starch 20g 面粉 Plain flour 24g 糖 Sugar 70g 油 oil 60g 3 tbsp 糕粉(即熟糯米粉,防黏沾用) Cake flour (cooked glutinous rice flour, used to prevent sticking) 牛奶,炼奶混合备用。 粉类过筛,加糖混合搅拌。 牛奶倒入粉类中混合均匀。 倒入油拌匀。 过筛去粉粒,盛入浅又阔的盘中,盖上铝箔纸。 大火蒸约15-20分钟,放凉。 待凉却的冰皮,把红豆沙陷平均分成20个25g,待用 凉却的冰皮面团搓揉至表面光滑柔软, 平均分成20个25g 冰皮包着红豆沙陷,揉圆,撒上糕粉,放入磨具压出模型。 冰箱冷藏2小时以上 Mix milk and condensed milk for later use.
