Our email link: [email protected] Ingredients: 4 cups shifted all-propose flour 1 cup butter or margarine 1 cup unsweetened fine coconut ½ cup white sugar 2 tbsp baking powder 2 large eggs, beaten 1 cup crushed pineapples and ½ cup juice Method: In a large bowl add, shifted flour and butter, crumble with “ clean hands” until the mixture is combined or use mixer with hook or paddle. Then add unsweetened coconut, sugar and baking powder. After add crushed pineapples and juice to flour mixture. Crack your eggs in a small bowl to check them. Then beat together, after pour in with flour mixture. Continue folding together. Now mix all ingredients together with spoon or mixer with paddle, until all combined. You will need two cookie sheets with two pieces pf parchment paper, scoop out about ¼ cup of mixture and have them 1 inch apart on cookie sheet. Have all tea buns the same size, small, medium or large, then bake in a 350ºF preheated oven for 15 to 20 minutes depending on your oven. Cool on wire rack or serve hot with a nice cup of tea. Bonita’s Tips: Add more sugar if you wish it sweeter, or use a low sugar. If using a mixer with hook or paddle don’t over mix the dough.
