Beans Salad with Walnuts | Easy Salad Recipe

Easy and healthy beans salad made with ingredients that are accessible and affordable. Perfect on its own or as a side dish! Recipe: Beans Salad with Walnuts Ingredients: 2 x 400g (14 oz) of canned red beans, drained and rinsed 1 yellow bell pepper ½ medium red onion 50g (½ cup) of walnuts 8g (a handful) of parsley ½ teaspoon of garlic, grated ½ teaspoon of salt or to taste ¼ teaspoon of ground black pepper or to taste 1 tablespoon of brown sugar 2 tablespoons of lemon juice 2 tablespoons of extra virgin olive oil Instructions: 1. Finely chop the onion, dice the bell pepper, chop the walnuts and chop the parsley. 2. To a large bowl, add the beans, pepper, onion, walnuts, parsley, garlic, olive oil, lemon juice, sugar, salt and pepper. Mix until well combined. 3. Serve on its own or as a side dish. Notes/Tips: The beans salad will stay in the fridge in an airtight container for up to 4 days. White wine vinegar can be used instead of lemon juice. The beans salad pairs well with chicken or fish.
