Pineapple

Pineapple #quickbread 2 cups All Purpose Flour 1 cup Sugar (consider Brown Sugar for more flavor) 1 teaspoon Baking Powder 1/2 teaspoon Salt 2 Eggs 8-ounce can (1 cup) Crushed Pineapple with the juice 1/2 cup Coconut Oil or Vegetable Oil 1/2 teaspoon Vanilla Extract 1/2 cup chopped Pecans (optional) 1/2 cup shredded Coconut (optional) (In a mixing bowl whisk together the flour, sugar, baking soda and salt. Add the eggs, pineapple, oil and vanilla. Stir together. Now fold in the pecans and coconut. (2) In a greased loaf pan add the mixture. Smooth the top evenly. Bake at 350 degrees F for 1 hour. Let cool 10 minutes then turn out onto your serving platter. NOTE: This bread actually tastes better the next day and the next day after that rather than fresh out of the oven.
