Today we are going to make hyderabadi mehfil chicken biryani for that we need the following ingredients Chiken -- 1 kg Cardamom -- 14 Cloves -- 15 Cinnamon -- 5 inch Shajeera -- 1 1/2 tbsp Salt -- 7 tbsp Chilli powder -- 2 tbsp Ginger garlic paste -- 1 1/2 tbsp Coriander leaves -- 1 cup Mint leaves -- 1/2 cup Fenugreek leaves -- 1/2 cup Green chillies -- 5 Ginger -- 2 inch Garlic buds -- 7 Tomato -- 1 Turmeric -- 1/2 tsp Black pepper -- 1 TSP Coriander seeds -- 2 tbsp Fennel seeds -- 1 tbsp Cashew nuts -- 3 tbsp Dry rose petals -- 2 tbsp Black cardamom -- 1 Nutmeg mace -- 1 Biryni leaf -- 1 Soya sauce -- 1 tbsp Oil -- 1 cup Water -- 4 ltrs Saffron -- 1/2 GM Lemon juice of 1 lemon Curd -- 200 ml Brown onions -- 11/2 cup Ghee -- 5 tbsp Basmati rice -- 1 kg First we will hand ground cinnamon, cardamom, shajeera and cloves roughly.., Then we take chiken in a bowl add grounded powder, salt, chilli powder, ginger garlic paste, coriander leaves mix it well and rest it to marinate for 20 minutes.., Then we take a pressure cooker add coriander leaves, mint leaves, Fenugreek leaves, green chillies, ginger, garlic, tomato, tumeric powder, black pepper, coriander seeds, fennel seeds, cashew nuts, dry rose petals, black cardamom, biryani leaf, nutmeg mace, Soya sauce, oil, water and make it cook untill 5 whistles come.., after it cools down we will take out some of its strach and make a fine paste of the ingredients..., Then we will add saffron, lemon juice, curd, brown onions, masala paste to marinated chicken and mix it well then we will add ghee to it and mix it again then we will make it to rest for marination of 3 hours.., Then we will take basmati rice and wash them and soak them for 1 hour .., Now we will take a pan add water, cinnamon, cloves, shajeera, cardamom, oil, coriander leaves, mint leaves, salt and cook it to boil on high flame for 5 minutes.., Then we will add soaked rice to it and let it cook upto 80% then we will strain the water and add rice to marinated chiken and cook it on High flame for 5 minutes then give it steam on low flame for 35 minutes on a old pan..., That's it our delicious mehfil biryani is ready to serve hot....
