I used 530g sugar because my apple juice had an original gravity of 1.046 and I wanted to raise the gravity to about 1.090 for a resulting wine of around 12% abv. If I were bottling the wine for longer storage (this one's for immediate consumption) I would have added potassium sorbate as well as the campden; campden kills yeast, potassium sorbate prevents fermentation from organisms that may contaminate the wine (wild yeasts etc)
