Don’t over-bake - how to check cupcakes are baked 5. Always bake one tray at a time and always bake in the centre of the oven 6. When you’re coring your cupcakes to fill them, don’t core all the way to the bottom otherwise you risk the cupcakes becoming soggy at the bottom 7. When adding fruits and berries into your cupcakes, always bake an extra 10 minutes because of the added moisture 8. Always bake cupcakes as soon as the batter is done. Don’t delay the baking process otherwise the raising agents may not work properly when baking. 9. Always cool your cupcakes before frosting them. Best to let them cool on a cooling rack at room temperature. Chilling them in the fridge may cause them to shrink, sweat and cause the paper to come away 10.
