杂炣，又名杂可、杂碎，是一种味道极佳的风味小吃，尤以河南省禹州市顺店镇杂炣最为著名。顺店镇位于禹州西部，镇里大小集市上最常见的、最好吃的小吃就数杂炣了。镇区生意最好的有两家，一家在北街，一家在南街。南、北街分单双日有集市，南街是行商就随集；北街是坐商，只等顾客上门。起初，杂炣仅仅是属于乡下农民的一道美味佳肴，如今，城里人也开始慢慢喜欢上杂炣了。上世纪八十年代初，在农村庙会最热闹的地段，常常能见到卖杂炣的。他们用废旧的大油桶自制成火炉，炉子上架着一口大锅，里面煮着诱人垂涎的杂炣，热气腾腾，香气四溢，弥漫了整个庙会，吸引了不少赶会的人们，杂炣摊总是被围得水泄不通，师傅也忙得不亦乐乎。那时，农村生活条件比较差，干农活儿的人们整天吃的都是一些粗茶淡饭，一年到头很少改善生活。因此，每逢镇上有庙会，农民们便狠狠心，从口袋里抠出几角钱，吆喝着师傅来一碗牛杂炣，美滋滋地吃上一顿，也好好地解解馋。 Zazhe, also known as Za Ke and Za Sui, is a delicious snack. They made a stove out of a used oil drum, and on the stove was a big pot, in which the tempting miscellaneous meat was cooked. The steam and aroma filled the whole temple fair, attracting many people who came to the fair. The miscellaneous meat stall was always crowded, and the master was very busy. At that time, the living conditions in the countryside were relatively poor, and the people who did farm work had some simple meals all day long, and rarely improved their lives throughout the year.
