Pot Roast Recipe 2 lb chuck roast Seasonings of choice I did s&p, garlic, onion, paprika, thyme and oregano 1 White onion Celery Carrots Yukon gold potatoes 2 cups Beef broth 1 cup Red wine Season the chuck roast Heat Dutch oven over medium high w avocado oil Sear chuck roast on both sides so it’s crispy - few mins Add 1 onion chopped Add 2 cups beef broth 1 cup wine Put in oven at 300 for 2 hours Add in 2 celery sticks, 4 carrot sticks and 2-3 big Yukon gold potatoes (chop all veg) Cook for another 2 hours Take out 30 mins before it’s done and shred the meat and put back in- add any extra seasonings to taste.
