Chopped Italian Hero: • Large Ciabatta or your favorite hero Bread • Soppessatta, Capicola, Mortadella, provolone (half pound of each) • 3 cups of shredded lettuce • 1 large tomato • ½ of red onion • 1 cup of medium-hot giardiniera • 1 cup of mayonnaise • ¼ cup of red-wine vinegar • ¼ cup of olive oil • ½ tsp. of dried oregano • Salt & Pepper to taste Directions: 1. Chop all the meats, cheese and veggies together and then place in a large mixing bowl. 2. Then add the rest of the ingredients together and mix well. 3. Finally, stuff into the bread and enjoy! Chicken Cutlet Hero: • Large Ciabatta or your favorite hero bread • 2 chicken breasts • 4 eggs • Granulated garlic, salt & black pepper • 1 cup of flour • 2 cups of Italian-style breadcrumbs • 2 cups of olive oil for frying • ½ lb. of spicy Capicola • 1 lb. of fresh mozzarella • 1 cup of roasted peppers • 2 cups of Arugula • Balsamic Glaze (drizzle) Directions: 1. Slice Chicken breast in half long ways and tenderize with meat hammer. 2. 2) Salt & pepper each side of breast. 3. 3) Beat 4 eggs with salt, pepper, and granulated garlic. 4. 4) Pour flour into a flat dish and same with breadcrumbs. 5. 5) Dip breast into flour first then egg wash and finally the breadcrumbs. 6. 6) Heat olive oil to 325-350 degrees F. 7. Fry for about 4-5 minutes on each side. 8. Place breast on Hero bread and layer with Capicola, Arugula, Roasted Peppers, Fresh Mozzarella, and then drizzle Balsamic Glaze on top. 9. Enjoy!
