Dal Kanda is a traditional dish from the Indian state of Maharashtra, particularly popular in the Vidarbha region. It is essentially a spicy lentil stew made with chana dal (split chickpeas) and flavored with onions, tomatoes, garlic, and various spices. The dish is typically served with rice or flatbreads like chapati or bhakri. It's known for its hearty and comforting flavors, making it a favorite among many. Saoji Dal Kanda is a traditional spicy dish from the Saoji community in Maharashtra, India. It's made with lentils (dal) and onions (kanda) cooked with a blend of fiery spices, including black peppercorns, cloves, cinnamon, and dry red chilies. Connect with me by social platform are : • Instagram :   / varshamenu_22   Sure, here's a simplified recipe for Saoji Dal Kanda: Ingredients: 1 cup chana dal (split Bengal gram) 1 large onion, finely chopped 2-3 green chilies, finely chopped 1 tomato, finely chopped 1 teaspoon ginger-garlic paste 1 teaspoon cumin seeds 1 teaspoon mustard seeds 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon garam masala Salt to taste Oil for cooking Fresh coriander leaves for garnishing Instructions: 1. Rinse the chana dal thoroughly and soak it in water for about 30 minutes. Then, drain the water. 2. Heat oil in a pressure cooker or a deep pot. Add cumin seeds and mustard seeds. Let them splutter. 3. Add chopped onions and green chilies. Sauté until the onions turn golden brown. 4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears. 5. Add chopped tomatoes and cook until they turn mushy. 6. Add turmeric powder, red chili powder, and garam masala. Mix well and cook for another minute. 7. Add the soaked and drained chana dal to the mixture. Mix everything well. 8. Add about 2-3 cups of water and salt to taste. Stir well. 9. Close the lid of the pressure cooker and cook for about 3-4 whistles or until the dal is cooked and soft. 10. Once done, let the pressure release naturally. Open the lid and check the consistency. If it's too thick, add some more water and adjust the seasoning if needed. 11. Garnish with fresh coriander leaves. 12. Serve hot with rice or roti.
