How to make a classic Poulet à la Normande at home

Salut, today I will be showing you how to make Supreme of Poulet Normande This is the third part of my new series taking you on a culinary tour of France and bringing you speciality dishes from the different regions. We are continuing today in the Normandy region in the North West of France. This is my version of Supreme de Poulet Normande which is ideal for a dinner party served with rice or saute potatoes and greens. Pair with a nice chilled Normandy cider or a vintage dry cider! Voila! Bon appétit! Ingredients:- (Serves 1) Chicken breast x 1 Butter x 50g Calvados/Brandy x 50ml Normandy Cider (or dry cider) x 250ml Double Cream x 125ml Chicken Stock x 100ml Shallots x 1 finely chopped Olive Oil x splash Apple x 1 peeled and quartered A little sugar Seasoning Over a medium heat, pan fry the chicken breast in a little olive oil and half the butter until golden. Discard any fat etc and then add the shallots and fry for a further 5 minutes. Flambee by adding half of the brandy/calvados. Add the chicken stock and cider, bring to the boil, then cover and simmer until liquid is reduced by half, approx. Add the cream and bring back to the boil and then simmer for another 10 minutes. In a separate pan, in the rest of the butter, sautees the apple with a little sugar until golden. Flambee with the remaining calvados/brandy. Dress the plate, by slicing the chicken and placing on top of the apple quarters and then drizzle the sauce around and on the top of the chicken. This is my version of Supreme de Poulet Normande which is ideal for a dinner party served with rice or saute potatoes and greens. Pair with a nice chilled Normandy cider or a vintage dry cider!
