If you’re a garlic lover…

GARLIC EGG FRIED RICE INGREDIENTS 24 gloves garlic, minced 3/4 cup oil* Corn starch 8 scallion, chopped 8 TBSP oil 9 eggs, beaten/ whisked 6 cups cooked 1 day old rice Cooked protein of choice- optional *I used avocado oil SEASONINGS 1 TBSP sugar 1 TBSP salt 1/2 TBSP black or white pepper 1 TBSP chicken boullion Maggi seasoning— optional 1. Mince garlic then coat garlic in just enough corn starch so its coated. 2. Heat up 3/4 cup oil and then fry garlic until golden brown. Pour garlic through a fine strainer so the oil and garlic is separated. Reserve garlic infused oil. (TIP: as soon as you see some color in your garlic, turn off your heat but continue to stir. The residual heat will cook it some more making it crispy and golden brown) 3. Chop scallion separating the whites from the greens 4. In a skillet, heat up 8 TBSP of oil. Use as much of your garlic infused oil as you can and then substitute the remaining with regular oil. (Note: I used avocado oil since that’s what I used 5. Once oil is hot, add the white part of your scallion and cook fo 15-20 seconds. Then add your eggs and scramble. 6. Once eggs are 75% of the way cooked, push eggs off to the side and add 1 day old rice breaking up any large clumps. 7. Once rice is broken up, combine eggs into it. Cook this for 5 minutes. Then add SEASONINGS and combine well. Then add the green parts of your scallion, protein of choice, turn off heat and top with fried garlic.
