Mashed Potato Stuffed Meatloaf

Recipe- 1 lb raw ground beef 2 eggs, slightly beaten 1/4 tsp pepper 1/8 cup dried parsley flakes 8 oz tomato sauce 1/2 cup no salt added ketchup 2 cups corn chex cereal, crushed 3 cups prepared mashed potatoes Preheat oven to 375 degrees In a large bowl, combine all the above ingredients except the mashed potatoes Press half of the meatloaf mixture into a pan that has a heavy layer of cooking spray Top the meatloaf mixture with all of the mashed potatoes & spread evenly Put the remaining meatloaf mixture on top of the mashed potatoes Cook in the oven uncovered for 50 minutes Enjoy!
