My first time fighting Seath it took me about 8-10 minutes to get the sword because his cuttable tail kept clipping through the walls, making it impossible to slice off. Not anymore. Also I tried to just use my club to beat him but I dont think anyone would want to see 10+ minutes of me hacking and smacking and missing... so I kind of cheesed with the Shield.
