Loft - having and maintaining loft is very important when hitting golf balls out of the rough Speed - you need speed because the grass is thick. Slower swings are going to grab more, causing chunk shots or balls to come out off target. Angle of Attack - move the ball back slightly in your stance, and move the handle back slightly. Keeping the handle too far forward decreases loft, which will cause the ball to come out too low. Maintaining loft with the proper angle of attack helps the ball pop out and settle softly.
