Cajun Fried Deviled Eggs

Hard boiled eggs battered in breadcrumbs, fried till crispy golden........... stuffed with spicy, savory filling. Slice six (6) boiled and peeled eggs down the center. Remove egg yolks to a mixing bowl. Add One (1) Tbsp Mayonnaise Add One (1) Tsp Yellow Mustard Add One (1) to Two (2) Tsp Sweet Relish Add few splashes Louisiana style hot sauce Add few teaspoons dried Chives Add few teaspoons bacon bits Add One (1) Tsp salted Cajun seasoning Add pinch of pepper Mix and combine well until smooth. Add additional mayonnaise and yellow mustard if consistency is too thick. Taste and adjust seasoning to taste. Place the mix into the corner of a storage bag and sit aside. Battering Station Add 1/2 cup breadcrumbs to a bowl. Add pinch of salt and pepper along with 1/4 -1/2 Tsp File Powder Mix well Add 1/2 cup all-purpose flour to another bowl Beat Two (2) eggs in a third mixing bowl Coat eggs with the egg wash and toss in the flour. Place back into the egg wash and coat well. Place into breadcrumbs and shake around and evenly coat the eggs with the breadcrumbs. Heat a few inches of frying oil in a pot over medium heat. Drop eggs into frying oil and fry until breading is golden. Remove to paper towel lined plate, hole side down to drain well and allow to cook a few minutes. Pipe the filling into the eggs. Shake some smoked paprika on top of the filling along with some more dried chives. Sprinkle with Louisiana hot sauce............... serve warm or place into refrigerator and serve cold. Good either way.
