Cinnamon Apple Syrup from Apple Peels and Cores

Don't throw away those peels and cores! Here's an easy way to put them to good use. Your pancakes will thank you :-). Cinnamon Apple Scrap Syrup 2 Gallon Bags worth of apple peels and (seeded) cores 6 cups of sugar for every gallon of juice made 4 Cinnamon Sticks Place peels and cores in a BIG stock pot (I use my water bath canner). Cover with water. Bring to a boil and then simmer for 20-30 minutes. Strain. Add 6 cups of sugar for every gallon of juice you have. Bring to a rolling boil stirring constantly. Reduce heat and simmer uncovered until desired consistency is reached (you will evaporate a lot of liquid!). Water bath canner 10 minutes for pints or half pints. Apple Syrup BBQ Pork Ribs One rack of pork ribs (3 lbs ish) Salt and Pepper 1 cup Cinnamon Apple Scrap Syrup 1/4 cup steak sauce OR soy sauce 1/4 cup apple cider vinegar 1 tsp cumin 1/2 tsp garlic powder Juice from one orange Rub ribs liberally with salt and pepper. Don't be stingy! Place in crock pot. MIx the rest of the ingredients together and pour over ribs. Cook on low for 6 hours, basting the ribs with the sauce 2 or 3 times during the cooking process. To make a dipping sauce from the rest of the liquid, remove ribs from crock pot. Mix 1 Tablespoon cornstarch in 1/4 cup water. Mix into the liquid in the hot crock pot to thicken.
