So this is the beautiful Italian cheese, Robiola Bosina. Perhaps, like me, you've not tried it before. Perhaps you already know, having tried it before, that this could be, perhaps, the best Italian cheese there is. I have to say, it's been a while since I tried a new cheese that has blown me away like this Italian cheese did. It's made with pasteurised cow's milk and pasteurised sheep's milk, with added cream, making it "duo latte" or "two milks". It belongs to the Brie family of bloom cheeses which include Camembert and many others. It's aged for 1 to 2 months and, being pasteurised, can be easily transported worldwide.
