Get at least one brand new video every week, including recipes, kitchen hacks and handy cooking tips to help you feed your family and friends:    / coles   Pork Meatballs in Tomato Sauce with Pasta Recipe by Colin Fassnidge Serves 4 Prep 20 mins (+ cooling time) Cooking 40 mins 2 garlic cloves, finely diced 1 onion, diced Olive oil, for frying 500g pork mince 50g breadcrumbs ½ bunch rosemary, leaves finely chopped ½ bunch tarragon, finely chopped ½ bunch flat-leaf parsley, finely chopped ½ bunch basil, finely chopped 1 egg 1 egg yolk Finely grated parmesan, to serve Cooked al dente pasta, to serve Tomato Sauce 2 onions, roughly chopped 2 garlic cloves, finely sliced 1 rosemary sprig, leaves chopped 2 x 400g cans tomatoes 400ml water 1. To make the tomato sauce, cook the onion and garlic for 5 minutes over medium heat. Season. Add the rosemary, tomatoes and water. Reduce heat to low and simmer for 30 minutes. 2. Meanwhile, to make the meatballs, preheat fan-forced oven to 180°C. Line a baking tray with baking paper. Over medium heat, cook the garlic and onion in olive oil for about 10 minutes or until soft. Set aside to cool. 3. Place the mince in a mixing bowl with the breadcrumbs, rosemary, tarragon, parsley, basil, onion mixture, egg and egg yolk. Season. Using clean hands, mix and incorporate the ingredients together. Shape the mixture into golf-ball sized shapes. Place on the lined tray. Cover with the tomato sauce and sprinkle with parmesan. 5. Bake in the oven for 30 minutes. Serve immediately with pasta. Alternatively, serve with salad and flatbread for lunch. Want more pasta recipes?
