Heat the whipping cream in a saucepan or in the microwave until it just starts to boil. 2. Pour the hot cream over the milk chocolate. Allow to sit for a few minutes and mix until well combined. If the chocolate has not melted completely, heat the mixture over a double boiler or in the microwave until it does. For the microwave, heat on high for 10 seconds at a time and mix. Repeat until the chocolate is completely melted. 3. Allow the mixture to cool to room temperature. The mixture will thicken considerably. Whip the thickened mixture for 1 to 2 minutes until light and fluffy. 4. Scoop 2 to 3 tablespoons of the chocolate mousse onto some plastic wrap. Wrap the mousse, twist the plastic wrap into a tight ball and shape the mousse with your hands into a hemisphere. If the mousse feels too soft to shape, refrigerate for 5 minutes at a time to firm it up slightly. Once you have your hemisphere, keep it wrapped and refrigerated until needed. Soufflé Pancakes 2 eggs, room temperature 23 g (2 tbsp) granulated sugar 15 g (1 tbsp) milk, room temperature 1 tsp vanilla extract 33 g (4 ½ tbsp) all purpose flour 2 g (½ tsp) baking powder 1. Carefully separate the egg whites and yolks, making sure not a trace of yolk ends up in the whites. Set aside the whites. 2. Beat the egg whites until foamy. Beat in ⅓ of the sugar until dissolved, then beat in ½ of the remaining sugar until dissolved, then beat in the remaining sugar until dissolved. Continue beating until soft peaks form, when the tip of the peak bends down slightly after the beaters are lifted up. The bowl can also be turned upside down without the whites falling out. 3. In a separate bowl, whisk together yolks, milk and vanilla. Sift in flour and baking powder and mix until there are no lumps of dry ingredients left. 4. Add 1⁄3 of the beaten egg whites into the yolk mixture and mix until roughly combined, then add in 1⁄2 of the remaining whites and gently fold with a spatula until roughly combined. Add in the remaining whites and gently fold until no white streaks remain. 5. Lightly oil a preheated non-stick pan on medium low heat. Scoop about 1⁄4 cup of batter onto the pan for each pancake, allowing the batter to spread and form itself into a circle. Sprinkle 2 teaspoons of water onto the pan and let it cook covered for 2 to 2 ½ minutes, until the surface of the pancake loses its sheen and does not look wet anymore. 6. Flip the pancakes, sprinkle 2 teaspoons of water onto the pan and cook covered for another 2 to 2 ½ minutes. Set aside to cool completely to avoid the whipped cream melting and sliding off later. 7. Repeat steps (5) to (6) until batter is used up. Make a bent teardrop shaped pancake for Eevee’s tail as well.
