Recipes: Lemon Meringue Bliss Balls Combine 1 cup of almond meal, 1 1/2 cups desiccated coconut, juice and rind of 2 lemons, 1/3 cup melted coconut oil and 1/4 cup agave or rice malt syrup Shape into balls and roll in additional coconut. Allow to set in the fridge. Choc-Salted Caramel Bliss Balls Soak 10 pitted medjool dates in boiling water, drain. Combine 1 cup cashews, 1 tbsp. tahini, 2 tbsp. cacao, a pinch of salt and the dates. Process until combined then roll into balls. Apricot, Oat & Chia Bliss Balls Soak 1 tbsp. chia seeds in 1/4 cup water for 10 minutes. Add to the food processor with 1 cup oats, 1 cup dried apricots, 1 1/2 cups shredded coconut and 2 tbsp. rice malt syrup. Process until combined then shape into balls. Roll in additional coconut if desired.
