Autumn Harvest at the Farmer’s Market

As autumn approaches, daylight is shorter and there’s a chill in the air, but there is no shortage of produce at the Prescott Farmers Market! Local farmers are harvesting a wide variety of fresh and delicious fruits and vegetables. Rita brought home squashes, onions, garlic, and potatoes, as well as some picks from the end of summer’s bounty, including eggplant, tomatoes, bell peppers, basil, and mint. She makes an easy, nutritious, and flavorful Warm and Crispy Potato Salad with Chili, Cilantro and Mint, using several of her finds from the market.
