Full written recipe of Sabudana Thalipeeth Prep time: 10-15 minutes (3-4 hrs soaking) Cooking time: 10-15 minutes Serves: 3-4 people Ingredients: Thalipeeth SABUDANA | साबूदाना 1 CUP WATER | पानी 1 CUP UNSALTED PEANUTS | मूंगफली 3/4 CUP POTATO | आलू 3-4 MEDIUM SIZED. (BOILED) FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED) CURRY LEAVES | कड़ी पत्ता 10-12 LEAVES (CHOPPED) GREEN CHILLI | हरी मिर्च 2-3 NOS. (CHOPPED) LEMON JUICE | नींबू का रस HALF A LEMON SENDHA NAMAK | सेंधा नमक 1 TSP CUMIN SEEDS | जीरा 1/2 TSP OIL | तेल AS REQUIRED (FOR COOKING) Chutney FRESH CORIANDER | हरा धनिया 1 BUNCH. ROASTED PEANUTS FRESH COCONUT | नारियल 3 TBSP GINGER | अदरक 1/2 INCH GREEN CHILLI | हरी मिर्च 2 NOS. LEMON JUICE | नींबू का रस HALF A LEMON DAHI | दही 2 TBSP SUGAR | शक्कर 2 TSP CUMIN SEEDS | जीरा 1/4 TSP SENDHA NAMAK | सेंधा नमक 1 TSP WATER | पानी VERY LITTLE Method: Wash the sabudana 2-3 times until the added water turns clear then discard the water & add the measured water, cover & let it soak for 3-4 hours. Once soaked, mix well with your hands & check if there is any water remaining, if there is then let them soak for some more time. In a hot pan add the peanuts & dry roast them over low flame while stirring continuously until they turn golden brown, then transfer into a bowl & cool it down completely. Add 70% of the roasted peanuts into a chopper & chop coarsely, you can also do the same with a knife. Add the roasted peanuts into the sabudana along with all the other ingredients of the mixture & mix well, make sure that the mixture combines & forms into a roundel. You can skip the ingredients that you don’t consume while fasting. Before cooking the thalipeeth, make the green chutney by grinding all the ingredients in a mixer jar, using very little water. Set a tawa over medium flame while you shape the thalipeeth. To shape the thalieeth, take a square parchment paper & apply a few drops of oil on it. Take a portion of the mixture & form it into a roundel, place it onto the greased butter paper, press it with your palm, then wet your hand & shape it into a round chapati by pressing & spreading it using your fingers, then make a small hole in the centre. Flip it carefully onto the hot tawa & peel the parchment paper. Add a few teaspoons of oil in the centre & cook the thalipeeth on one side for 2-3 minutes over medium high flame. Once it turns golden brown & crisp, flip it & add more oil & cook until it turns crisp from the other side as well.
