Breakfast: PBC “McMuffin” and ½ c. blueberries Recipe and preparation instructions below. Always talk to your doctor before making changes to your diet. PBC “McMuffin” Total time: 15 min ½ small haas avocado ½ lemon Black Pepper 1 tsp. Dijon mustard 2 tsp extra virgin olive oil (EVOO) 1 large egg ½ c. fresh spinach (no stems) 1 Whole grain English muffin hot sauce (optional) Instructions: 1. Mash the avocado in a small bowl with a fork and season with fresh black pepper, Dijon mustard and juice from half a lemon. 2. Heat a small nonstick skillet with 1 tsp EVOO over low heat and sauté spinach until wilted. Remove from skillet and set aside. 3. Add additional 1 tsp EVOO to skillet and let warm. Now gently crack the egg into a ramekin then slide gently into the skillet. Cover with a tight lid and cook, uninterrupted, until whites are set but yolk is still runny, about 2 to 2 ½ min. Slide the egg out of the skillet onto a plate or your toast (see below) 4. While the egg is cooking, toast your English muffin. 5. Spread the avocado mash across both halves of the toasted English muffin, top with spinach, then your egg (add a dash of hot sauce and additional black pepper if desired). Top with the other side and enjoy! MAKE AHEAD TIP: Clean and portion your spinach at the beginning of the week. VARIATIONS: Not a fan of lemon? Use lime juice instead!
