Ingredients: 4 large potatoes Vegetable oil for frying Salt to taste Instructions: Peel the potatoes and cut them into evenly sized fries. You can cut them into thick or thin strips, depending on your preference. Rinse the cut potatoes under cold water to remove any excess starch. Boil potatoes to 3-4 minutes maximum along with some salt. Drain the potatoes and pat them dry thoroughly using a kitchen towel or paper towels. Heat vegetable oil in a deep fryer or large pot to about 350°F (175°C). Carefully add the potatoes to the hot oil in small batches, ensuring they are fully submerged. Avoid overcrowding the pot, as it can lower the oil temperature and result in soggy fries. Fry the potatoes for about 5-6 minutes, or until they turn pale golden. Remove them from the oil using a slotted spoon or tongs and transfer them to a paper towel-lined plate to drain excess oil. Add some corn flour or potato starch on fried potatoes and mix it gently. Freeze it for 1 hour and batch fry according to your requirement. Increase the heat of the oil to about 375°F (190°C). Once the oil is hot, return the partially cooked fries to the oil in small batches. Fry them for an additional 2-3 minutes until they turn golden brown and crispy. Again, remove the fries from the oil and place them on a paper towel-lined plate to drain. While the fries are still hot, season them with salt to taste. Serve the crispy French fries immediately and enjoy them with ketchup, mayonnaise, or your favorite dipping sauce.
