Food Lovers’ Editor, Kripal Amanna visits this eatery for a late breakfast where he tastes an array of dishes, some hitherto unseen in restaurants, such as the Nuchinna Unde, Halubai, Hayagreeva (originally prepared as a temple offering), Ottu Shavige and more. He also meets the three generations of the TKS Iyengar family that is seeking to share its interesting culinary traditions with the people of Bengaluru though this endearing enterprise. Enjoy! Bale Elle Idli The Bale Elle Idli carries with it the subtle aroma of the banana leaf in which it is steamed. The leaf also imbues the idli with a light colouring. You bite into the crunch of coconut and the lentils as you taste the idli, savour it with the sambar that’s perfect in its sour-sweet balance and the spirited chutney. Rs. 30 (usd 0.4) for 2 pcs 9/10 Thatte Idli A deliciously delicate thatte idli, springy like it should be. Acts as the perfect canvas of sorts to soak up the flavours of the chutney and sambar. Rs. 30 (usd 0.4) for 2 pcs 8.5/10 Classic Idli Grainy in texture and porous, but pales in comparison to the bale elle and thatte idli served here. Rs. 12 (usd 0.2) 7/10 Nuchinna Unde If you need only one reason to visit TKS Iyengar, these steamed dumplings made of four lentil varieties would be it. A traditional Iyengar recipe wouldn’t use onions, but these are added here due to the wants of running a commercial establishment, which lends it a delightful crunch alongside the lentils. Rs. 30 (usd 0.4) for 2 pcs 10/10 Puliyogare Cooked and cooled rice, flavoured with spicy tamarind paste and fortified with the crunch of lentils and ground lentils, this is a Iyengar classic with the perfect balance of flavours - touch of sweet that gives into sour and the warmth of the spices. The puliyogare here is made with red rajamudi rice from Hassan. Rs. 50 (usd 0.7) 9/10 Ottu Shavige This sweet and ‘khaara’ combo is served with ella pudi (a powder made of sesame seeds, peanuts and jaggery) gasgase (poppy seed) payasa and a nutty, spicy chutney, enlivened with mustard oil and red chillies. Rs. 60 (usd 0.8) 9/10 Godhi Halubai Made with puree of wheat, coconut milk and jaggery, this wobbly pudding like dessert magically disappears into sweet ‘nothingness’ when you place a piece in your mouth. Rs. 10 (usd 0.15) 8/10 Hayagreeva Taste the creaminess of lentils and the bite of dried coconut and cashew nuts in this decadently sweet dessert that was originally made as an offering to Lord Hayagreeva. Rs. 50 (usd 0.7) 8.5/10 Sweet Pongal The whiff of edible camphor that greets you on the palate disappears quickly into the background, leaving you to relish the milky richness of this rice and lentil dessert.
