This is one of the most requested recipe ever. Red Lamington cake is a classic Australian sweet treat. Little squares of soft sponge cake are rolled in icing and desiccated coconut, then filled with the delicious combination of whipped cream and raspberry jam. But in Mauritius we called it Gato carre Rouge or Jam Francis. The Mauritian version uses butter cake with Buttercream, Red icing, coconut and Jam. I slightly change the recipe into my own version.
