Add the diced potatoes and a pinch of salt. Cook for 10-15 minutes, stirring occasionally, until the potatoes are golden and tender. Once cooked, set the potatoes aside. Let the sauce simmer for 5 minutes to thicken slightly and absorb the flavors. Combine and Finish: Return the sausage and potatoes to the pan. Stir everything together so the rich tomato sauce coats all the ingredients. Let it all cook for another 5 minutes, allowing the flavors to meld and the sauce to thicken. Serve and Enjoy: Once everything is well mixed and heated through, remove from heat and serve hot.
