Irish whiskies are a generally toned down flavor profile for me. Here we take to well respected Irish Whiskies and pit them against each other. Both the Redbreast 12 and Yellow Spot whiskies are made from the Middleton Distillery in Ireland. The Redbreast 12 is aged in ex bourbon and ex Oloroso Sherry casks while the Yellow Spot 12 is aged in ex bourbon barrels, ex Oloroso Sherry casks and ex Malaga casks. The Redbreast 12 is chill filtered, losing some of those long chain esters that can contribute to the flavors of the whiskey. Yellow Spot 12 is non chill filtered. What's your go to Irish Whiskey?
