I came across this interesting article where this person went into some crazy detail and depth regarding getting hot wings to cook in the oven just as well as if you had deep fried them. We all know, if you bake hot wings, normally they'll come out soft. Because the key to a good hot wing, is the bubbles and texture that the skin provides when you deep fry them. Through trial and error, they found by using Baking powder you can change the chemistry of the skin to create a Maillard reaction that is created when you normally fry a protein. Make sure to get the moisture off the wings before dusting them to prevent clumping. 2. Use 1 tsp of baking powder per pound of wings (aluminum free) if you see Sodium Aluminum Sulfate, keep looking. 3. Use 3/4 - 1 tsp salt per pound of wings. 4. Dry the wings out putting them on a rack and leave them uncovered in the refrigerator at least overnight. 5. Bake at 450F for 20 minutes, then flip them, and bake for 10 more minutes until golden brown. I found it took another 10 additional minutes to hit that mark. So that was 40 minutes all together.
