Crockpot Chicken with "Stuffing" | Low Carb | Keto Friendly

We have been loving experimenting with new low carb recipes and I just had to share this one with you guys. Super delicious and is a great option for a weeknight dinner. Enjoy! Original Crockpot Chicken & Stuffing:    • Crockpot Chicken with Stuffing | Easy...   Crockpot Chicken & "Stuffing" - Low Carb & Keto Friendly Ingredients: 3-4 chicken breasts (6 chicken thighs, if using thighs) 2 garlic cloves, roughly chopped 1-2 tsp Goya Adobo seasoning (optional- adds great flavor) low starch vegetable of choice (carrots, celery, onion, zucchini (add towards the end of cooking to avoid being super mushy), bell pepper) Biscuit Stuffing: 2 cups almond flour (can substitute all purpose flour if not concerned about low carb/keto) 2 tsp baking powder 2 eggs, beaten 1 stick of unsalted butter, melted (1/2 cup) 1 tsp garlic powder 3/4 tsp kosher salt 1/2 cup shredded cheddar cheese 1/2 tsp poultry seasoning 1/2 tsp dried thyme Creamy Mixture: 1/2 cup low sodium chicken broth 1/3 cup heavy whipping cream 1 tsp garlic powder 1/4 tsp dried thyme (optional) 1 tbsp. cornstarch salt & pepper to taste 1. For the biscuit mixture: Combine almond flour and baking powder. Use a whisk or fork to break up any lumps. Add garlic powder, kosher salt, dried thyme and poultry seasoning. Add fresh cracked black pepper to taste. Combine all dry ingredients. Add melted butter and eggs and incorporate thoroughly. Lastly, add the cheddar cheese and mix into dough. Set aside. 2. For the creamy mixture: In a medium bowl add chicken broth, garlic powder and cornstarch. Whisk to combine. Make sure all of the cornstarch is dissolved. Crack in some fresh black pepper. Add heavy whipping cream. Whisk and set aside. 3. Trim and season chicken with salt and pepper. 4. Place chicken in one layer in your crockpot. Add vegetables either on top or bottom of chicken, either way is fine. Pour creamy mixture into crockpot. Scoop the biscuit/stuffing dough using a small cookie scoop or just using a tablespoon. 5. Cover crockpot, cook on high for 4 hours or 6-8 hours on low. Biscuits will be firm and slightly crispy around the edges when finished. Chicken will fall apart and be cooked thru.
