Ingredients: Ragi or Finger Millet Flour - 2 Cups Ghee - 1/2 Cup + 4 Tbsp + 3 tsp (for frying Cashews) Powdered Sugar - 2 Cups Cardamom Powder - 1 tsp (optional) Broken Cashews - 15-20 (optional) Method: 1. Heat 1/2 Cup Ghee in a pan. Add 15-20 broken Cashews and fry till they turn golden in color. Once done, remove to a bowl or plate. Keep aside. 2. To the same melted Ghee, add 2 Cups of Ragi Flour and fry in low flame for about 10 minutes. Slowly Ragi Flour will mix well with Ghee and roast properly. You can smell the aroma of roasted Ragi Flour and the mixture should turn sand like in texture. Switch off the flame and allow it to cool till it is warm. If in the same hot pan used for roasting, mix well with the help of spatula in between for every 3-5 minutes once. Now you can see that the Ghee starts to ooze out slightly. 3. Once the mixture turns warm, add Powdered Sugar in increments and mix well with the hand. Add 1 tsp Cardamom Powder, 4 Tbsp Ghee and fried Cashews and mix everything well. 4. Now take small portion of the Ragi mixture and start preparing Unde/Laddus. We can prepare 22-25 Unde/Laddus from the above measurement. Now Ragi Unde or Ragi Laddu is ready. Store them in an air-tight container. The Unde/Laddus can be preserved for about 10 days. Quality cooking wares that I love and recommend.
