Coffee Brewing And Extraction Yield

In today's video, Michael talks about coffee brewing & extraction yield. He explains what it is and how to measure it. Just by knowing how to calculate extraction yield will help us improve our coffee roasting and coffee brewing skills. Last week we talked about how brewing is the process of extracting coffee compounds from the beans. Today we want to focus on the concept of measuring the amount of compounds we take out of coffee when during the brewing process. We use time and temperature measurements when we roast coffee. So, just like roasting, we can measure and track data within our brewing process to improve the results and we do this through a couple of ways including refractometers and our palate. Refractometers can help us measure the TDS and present a calculated number. We can also detect brewing defects (over extraction or under extraction) using our palate. Have you used a refractometer?
