For this dish you can use whatever vegetables you prefer to steam your fish, feel free to tweak it, it may not be traditional Jamaican cuisine anymore, but once you have fun cooking and eating it, thats all that matters. For me, adding rum and flambéing the dish added a new flavour along with the sweet orange juice.
