Rhubarb Mint Syrup | Water Bath Canning Recipe | Homestead Pantry

Rhubarb Mint Syrup is one of my favorite recipes to use up fresh rhubarb from the garden. In previous years I have made a small batch of this for the fridge, this year I am water bath canning the recipe so we have a shelf stable syrup for the pantry. This Rhubarb Mint Syrup is a great addition to cocktails, lemonade, sparkling water, or can be used to flavor kombucha or water kefir. Rhubarb Mint Syrup Recipe: 8 cups chopped rhubarb Fresh mint to your liking - I do a few handfuls 2 cups cane sugar or honey 4 cups water Simmer rhubarb, sugar, and water together for 20 minutes. Turn off heat and add mint leaves. Let mixture steep for about 30 minutes. Strain through cheesecloth. Fill jars to 1/4 inch of headspace and process for 10 minutes in a water bath canner.
