I've been dreaming about the matcha shaved ice I had in Nakamura Tōkichi in Uji, Japan as it was so intensely matcha like no others. Since traveling to Japan is not an option right now, I decided to recreate it with premium matcha, and a mighty little hand churn ice shaver. It's layers if rich matcha syrup, matcha cream and small mochi balls. I used the mochi dough I made for tangyuan, but you can use store-bought frozen ones too. #shavedice #kakigori #matcha Thanks for watching and make sure to LIKE and subscribe 🔔 to my channel for more pastry videos 🥰 Mochi Balls 80g tangyuan dough • Praline Peanut Tang Yuan | Glutinous ... Divide tangyuan dough into ~5g each and shape it into balls. Cook in a pot of boiling water, and add a big splash of cold water when it comes to a boil. Repeat twice. Submerge the cooked mochi balls in cold water and set them aside. Matcha Syrup Syrup base water 30g granulated sugar 8g demerara sugar 8g Matcha 8g Add water, granulated sugar, and demerara sugar into a small pot and cook over medium heat until the sugar dissolves. Whisk the syrup with the matcha powder until smooth. Matcha Cream Matcha 6g 35% cream 80g Sugar 8g Add ~20g of the cream into the matcha and make a paste. Add another 20g of cream and whisk until smooth. Pass through a fine sieve to remove lumps of matcha and add the rest of the cream. Mix until well incorporated. Add sugar and mix until sugar dissolves. Whisk to thicken. Set aside in the fridge.
